Bresaola and Fig Salad
5 Ripe Figs
6 Slices Bresaola – Sliced Thin
2-3 Tbsp Extra Virgin Olive Oil
Sprinkle of Lemon Juice
Salt and Pepper – To Taste
Freshly Grated Cheese – Your favorite
Trim the scallions and blanch for a few minutes in a pot of boiling water. Blot dry. Cut the scallions diagonally and cut each fig into several slices.
In a mixing bowl, combine the figs, scallions, olive oil, a splash of lemon juice, salt and pepper. Toss gently. Layer the bresaola on two individual plates. Garnish evenly with the figs and scallions and top with an ample sprinkling of freshly grated cheese.
NOTE: We have done this with prosciutto and also with just a thick slice of freshly made mozzarella.
