Porchetta is an Italian roast pork that’s moist, juicy and flavorful. Across Italy, Porchetta is sold by pitchmen out of carts or white vans usually during holidays and public gatherings; very similar to the American version of an ice cream truck that visits community outings like little league games. Village stores will advertise that Porchetta is available with signs in their windows and is typically sold by the pound or served in a sandwich (panino). Whether it’s served as the primary meat dish during a dinner or a picnic, Porchetta is always a big hit with its audience.

There are many variations of Porchetta but it’s basically a whole pig or boneless pork roast that is seasoned with salt, pepper, garlic, rosemary, wild fennel seeds and other herbs, which is then slow cooked for hours. As one would expect, the stuffing mixture varies according to the traditions of each region.

Porchetta Italy & LeVigneWhile visiting family in Tuscany a few years ago, I had the unique opportunity to view and participate in the preparation of an entire Porchetta.  It was a wonderful experience and one that allowed me to return home with priceless tips and ideas for cooking our own.

Our special version of Porchetta pork cut, is seasoned with wild fennel, garlic, salt, black pepper and a variety of other herbs, patiently marinated and then baked to perfection.

Porchetta is a customer favorite and we are considering making it available for special occasions via special order.  All you need to do is place your special order, pick up a fully seasoned Porchetta and bake it at home in your kitchen or in the outdoor wood burning pizza oven which, we have been told,  many of our customers have.  We have cooked Porchetta at our house and the fragrance of the meat cooking is tantalizing. The average weight of an uncooked Porchetta is 6 to 9 pounds.
