• 4 Tbs Olive Oil – good quality*
• 1 Medium Onion – diced
• 4 Garlic Cloves – chopped
• 1 Tbs Dried Red Pepper Flakes
• 2 Cups Cherry Tomatoes – halved or
• 2 Cups Your Faorite Tomato – large chunks
• 3 Tbs Balsamic Vinegar – good quality*
• 1 Yellow or Orange Bell Pepper – cut into small pieces
• 2 Tsp Tomato Paste*
• 2 Tsp Honey
• Kosher or Sea Salt – to taste
• Black Pepper – freshly ground
• 4 Tbs Parsley or Basil – fresh not dried, roughly chopped

In a small pan combine the olive oil and the onion and cook over medium heat until the onion is slightly soft. Add the garlic, red pepper flakes and stir in well. Add the tomatoes, vinegar, bell pepper, tomato paste, honey, salt and pepper. Stir all together and cook for about 5 minutes or until a desired wellness. Remove from heat and put into serving dish to pass or spoon directly on meat and sprinkle with chopped parsley or basil.
